- 2 fennel bulbs
- 1 onion
- 2 cloves garlic
- 1 cup cherry tomatoes
- 1/2 head cauliflower
- 3/4 cup green beans
- 1 cup button mushrooms
- 1 1/2 tablespoons fresh parsley
- Salt and black pepper to taste
Instructions:
-
Preparation: - Warm the olive oil in a large saucepan over moderate heat.
- While the oil heats, chop the fennel bulbs and onion into thin slices.
- Mince the garlic cloves.
- Halve the cherry tomatoes.
- Cut the cauliflower into bite-sized florets.
- Trim the ends off the green beans.
- Slice the button mushrooms.

-
Cooking: - Add the sliced fennel and onion to the saucepan. Cover and cook for 5 minutes until they begin to soften.

- Meanwhile, steam the cauliflower florets and green beans until just tender in a separate pan.

-
Combining: - Once the fennel and tomato mixture is ready, add the sliced button mushrooms to the saucepan. Cook gently for 3 to 4 minutes until the mushrooms are softened.
- Stir in the steamed cauliflower florets and green beans, mixing well to combine all the flavors. Season generously with salt and freshly ground black pepper.

-
Finishing Touches: - Remove the saucepan from the heat and set aside the vegetables to cool slightly.
- Sprinkle the freshly chopped parsley over the vegetables just before serving to add a burst of freshness.

-
Serving: - Serve the Vegetables A La Grecque warm as a comforting side dish or allow them to cool to room temperature for a refreshing salad-like experience.
- Enjoy these flavorful vegetables on their own or as a delicious accompaniment to grilled meats or crusty bread.
