Description: During a visit to my future in-laws’ house many years ago, a friend of theirs made these delicious apricot bars. Before I flew home, I had the recipe in my hand to take back with me.

Ingredients:

| 1/2 tsp | Salt | 
| 1/4 tsp | Vanilla extract | 
| 1/2 cup | Dried apricots | 
| 1/2 cup | Chopped nuts | 
Instructions:
- 
Prepare Apricots: - Place the dried apricots into boiling water for 10 minutes; then drain.
- Chop cooled apricots and set aside.
 
- 
Preheat Oven: - Preheat oven to 350°F (175°C).
 
- 
Prepare Baking Pan: - Grease an 8-inch square baking pan.
 
- 
Prepare Bottom Layer: - In a small bowl, mix together butter, granulated sugar, and 1 cup of flour.
- Press this mixture into the prepared pan.
 
- 
Bake Bottom Layer: - Bake for 25 minutes, then set aside to cool.
 
- 
Prepare Top Layer: - In another small bowl, beat together eggs and brown sugar.
- Fold in 1/3 cup of flour, baking powder, and salt until well combined.
- Stir in vanilla extract, chopped apricots, and nuts.
 
- 
Assemble and Bake: - Spread the top layer mixture evenly over the baked bottom layer.
- Bake for an additional 30 to 40 minutes, until the top is golden brown.
 
- 
Cool and Serve: - Remove from the oven and cool on a wire rack.
- Once cooled, sprinkle with confectioner’s sugar.
- Cut into squares and serve.
