Hot Liverwurst Toast with Tomatoes π

Ingredients:
- 200g liverwurst
- 1 green peppercorn, cracked
- 1 egg yolk
- 1 tbsp brandy
- Marjoram, to taste
- Fresh parsley, chopped, to taste
- 1 apple, cored and sliced into 4 rings
- 1 leek, sliced
- 4 slices Swiss cheese
- 1 tbsp butter
- 4 slices good quality bread (such as deli-cut rye)
- 2 tomatoes, halved
- Lettuce leaves, for serving
- Olive oil, for drizzling
- Sea salt, to taste

Preheat Oven: Preheat your oven to 350Β°F (175Β°C).

Prepare Liverwurst Mixture: Remove the liverwurst from its casing and place it into a large mixing bowl. Mix in the cracked green peppercorn, egg yolk, brandy, marjoram, and chopped parsley. Combine well and set aside.

Prepare Apples: Core the apple and slice it into 4 thick rings. Make sure the slices resemble canned pineapple rings in thickness.

Saute Apples and Leeks: In a skillet, heat butter over medium heat. Brown the apple slices on both sides, then add the sliced leek and sautΓ© until lightly browned.

Assemble Toasts: Spread each slice of bread evenly with the prepared liverwurst mixture. Top each slice with a sautΓ©ed apple ring, followed by the cooked leeks. Place a slice of Swiss cheese on top of each toast.

Prepare Tomatoes: Place the tomato halves, cut sides up, on a foil-lined baking sheet. If desired, drizzle them with olive oil and sprinkle with a little extra Swiss cheese. Season with sea salt, if desired.

Bake: Arrange all four assembled toasts on the same baking sheet as the tomatoes. Bake in the preheated oven for about 10 minutes or until the cheese is nicely browned.
