Pineapple Jello Salad

1 Banana
2 cups Miniature marshmallows
2 Eggs
2 tbsp Butter
2 cups Sugar
1/2 cup Flour
1 tub Cool Whip
1 cup Grated cheese
1 cup Chopped walnuts

Instructions:

  1. Prepare Jello:

    • Begin by mixing the jello according to the package directions.
    • Once mixed, add in the crushed pineapple, sliced bananas, and miniature marshmallows, stirring until well combined.
  2. Set Jello:

    • Pour the prepared mixture into a 9×13 inch pan, ensuring an even distribution.
    • Place the pan in the refrigerator and allow the jello to chill until firm.
  3. Prepare Topping:

    • In the top of a double boiler, combine the eggs, butter, flour, and sugar.
    • Gradually add in the reserved pineapple juice (if you don’t have a full cup of reserved juice, you can make up the difference with water), stirring continuously until the mixture thickens.
    • Once thickened, remove from heat and allow it to cool to room temperature.
  4. Incorporate Cool Whip:

    • Gently fold the Cool Whip into the cooled egg mixture until well combined.
  5. Assemble Salad:

    • Carefully spread the Cool Whip mixture over the chilled jello in the pan, creating an even layer.
