Title: Shredded Chicken in Fragrant Spices

Ingredients:

  • 300 grams shredded chicken (boiled/fried)
  • 5 shallots
  • 3 cloves garlic
  • 1/2 tomato
  • 1/2 tsp ground pepper
  • 1/2 tsp shrimp paste (terasi)
  • 2 bird’s eye chilies (cabe rawit)
  • 2 curly chilies (cabe kriting)
  • Sugar to taste
  • Salt to taste
  • Water as needed
  • Seasoning powder (Royco) to taste
  • 2 bay leaves
  • 1 thumb-sized galangal, bruised

Instructions:

  1. Grind all spices except tomato, galangal, and bay leaves until smooth.
  2. Heat a frying pan with a little cooking oil, then sauté the ground spices with bay leaves and bruised galangal.
  3. Once fragrant, add the diced tomatoes.
  4. Pour in enough water and season with Royco seasoning powder to taste if needed.
  5. Add the shredded chicken and mix well.
  6. Simmer until the sauce thickens and reduces.
  7. Serve hot.
