Title: Shredded Chicken in Fragrant Spices
Ingredients:
- 300 grams shredded chicken (boiled/fried)
- 5 shallots
- 3 cloves garlic
- 1/2 tomato
- 1/2 tsp ground pepper
- 1/2 tsp shrimp paste (terasi)
- 2 bird’s eye chilies (cabe rawit)
- 2 curly chilies (cabe kriting)
- Sugar to taste
- Salt to taste
- Water as needed
- Seasoning powder (Royco) to taste
- 2 bay leaves
- 1 thumb-sized galangal, bruised
Instructions:
- Grind all spices except tomato, galangal, and bay leaves until smooth.
- Heat a frying pan with a little cooking oil, then sauté the ground spices with bay leaves and bruised galangal.
- Once fragrant, add the diced tomatoes.
- Pour in enough water and season with Royco seasoning powder to taste if needed.
- Add the shredded chicken and mix well.
- Simmer until the sauce thickens and reduces.
- Serve hot.
