Ikan Kembung Sambal Balado: A Flavorful Indonesian Delight

Ingredients:

For the Fish

  • 500 grams Fresh Ikan Kembung (Mackerel)

For the Spice Paste

  • 3 Red Chilies
  • 2 Shallots
  • 2 Garlic Cloves
  • 2 cm Galangal
  • 5 Coriander Seeds

For the Sauté

  • 3 Shallots
  • 3 Garlic Cloves
  • 1 Onion
  • 1 Tomato

Additional Ingredients

  • Cooking Oil, to taste
  • Salt, to taste
  • Flavor Enhancer (optional)
  • Sweet Soy Sauce, to taste
  • White Sugar, to taste
  • 3 Bay Leaves

Preparation Steps:

  1. Make the Spice Paste:
Begin by combining the ingredients for the spice paste: the red chilies, shallots, garlic, galangal, and coriander seeds. Using a mortar and pestle, grind these ingredients together until they form a smooth paste that exudes a delightful aroma.

  2. Prepare the Aromatics:
Next, slice the shallots, garlic, onion, and tomato for sautéing. This combination will add depth and flavor to your dish.

  3. Fry the Fish:
Heat an adequate amount of oil in a frying pan. Once the oil is hot, carefully add the cleaned ikan kembung. Fry the fish until they are golden brown and cooked through, ensuring they become crispy on the outside. After frying, remove the fish from the oil and set them aside to drain on paper towels.

  4. Sauté the Aromatics:
In the same pan, add a bit more oil if necessary and begin sautéing the chopped shallots, garlic, and onion. After a few moments, introduce the spice paste you prepared earlier. Sauté this mixture until it becomes fragrant and the oil begins to separate, indicating that the spices are well-cooked.

  5. Add the Remaining Ingredients:
Pour in enough water to create a sauce. Season with salt, flavor enhancer, a pinch of sugar, a drizzle of sweet soy sauce, and add the bay leaves for extra aroma. Stir well to combine all the ingredients and adjust the seasoning to your preference.

  6. Combine the Fish and Sauce:
Gently place the fried ikan kembung into the pan, ensuring each piece is coated with the flavorful sauce. Stir carefully, allowing the fish to soak up the delicious flavors from the sauce.

  7. Finish Cooking:
Allow the sauce to reduce slightly until it thickens and clings beautifully to the fish. Once it reaches the desired consistency, remove the pan from heat.

  8. Serve:
Your Ikan Kembung Sambal Balado is now ready to be served! Present this vibrant dish with steamed rice for a truly satisfying meal that showcases the rich culinary heritage of Indonesia.

Enjoy this delightful dish, perfect for family gatherings or any occasion that calls for a touch of spice and warmth!
