Ingredients:

  • 1 whole medium-sized chicken, cleaned and cut into four pieces
  • Spice Paste:
    • 6 shallots
    • 4 cloves garlic
    • 6 curly red chilies
    • 2 tbsp ready-to-use gulai seasoning
    • 2 cm ginger
    • 3 cm galangal
    • 2 stalks lemongrass (bruised)
    • 6 kaffir lime leaves
    • 2 bay leaves
    • 350 ml coconut milk
    • 1 piece tamarind (asam kandis)

Steps:

  1. Clean the chicken thoroughly and cut it into four pieces.
  2. In a blender or food processor, combine shallots, garlic, red chilies, gulai seasoning, ginger, and galangal. Blend until smooth.
  3. Heat a pot over low heat. Add the blended spice paste, lemongrass, kaffir lime leaves, and bay leaves. Cook until fragrant.
  4. Add the chicken pieces to the pot. Stir to coat the chicken evenly with the spice mixture.
  5. Pour in the coconut milk. Stir occasionally until the coconut milk is almost absorbed and the chicken is tender. Remove from heat.
  6. Preheat the oven to a medium-high broil.
  7. Transfer the chicken pieces onto a baking tray lined with foil. Grill the chicken in the oven, turning occasionally, until both sides are slightly charred and crispy.
  8. Serve the grilled chicken hot, garnished with fresh herbs if desired.
