- 1 whole medium-sized chicken, cleaned and cut into four pieces
- Spice Paste:
- 6 shallots
- 4 cloves garlic
- 6 curly red chilies
- 2 tbsp ready-to-use gulai seasoning
- 2 cm ginger
- 3 cm galangal
- 2 stalks lemongrass (bruised)
- 6 kaffir lime leaves
- 2 bay leaves
- 350 ml coconut milk
- 1 piece tamarind (asam kandis)
Steps:
- Clean the chicken thoroughly and cut it into four pieces.
- In a blender or food processor, combine shallots, garlic, red chilies, gulai seasoning, ginger, and galangal. Blend until smooth.
- Heat a pot over low heat. Add the blended spice paste, lemongrass, kaffir lime leaves, and bay leaves. Cook until fragrant.
- Add the chicken pieces to the pot. Stir to coat the chicken evenly with the spice mixture.
- Pour in the coconut milk. Stir occasionally until the coconut milk is almost absorbed and the chicken is tender. Remove from heat.
- Preheat the oven to a medium-high broil.
- Transfer the chicken pieces onto a baking tray lined with foil. Grill the chicken in the oven, turning occasionally, until both sides are slightly charred and crispy.
- Serve the grilled chicken hot, garnished with fresh herbs if desired.
