Simple and Delicious Mie Ayam Recipe

Ingredients

For the Broth:

  • Water, sufficient for boiling chicken
  • 1/4 chicken breast
  • 10 cups water
  • 2 cloves garlic, thinly sliced
  • 3 tablespoons salt
  • 1 tablespoon MSG (optional)
  • A pinch of black pepper
  • A pinch of Royco seasoning (optional)
  • 3 stalks green onions

For the Chicken:

  • 1/4 chicken
  • 6 shallots
  • 5 cloves garlic
  • 1 stalk lemongrass
  • 1/2 inch ginger
  • 1/2 inch turmeric
  • 4 kaffir lime leaves
  • A little bit of garlic powder for easier grinding
  • Soy sauce, to taste

For Serving:

  • Noodles, as needed
  • Green vegetables, as desired

Instructions

  1. Prepare the Broth:

    • Boil the chicken breast in sufficient water until it is half-cooked. Discard the water and then reboil the chicken in fresh water until fully cooked.
    • Add garlic slices, salt, optional MSG, black pepper, Royco seasoning (if using), and chopped green onions to the broth. Simmer to allow the flavors to meld.
  2. Prepare the Chicken:

    • Blend the shallots, garlic, lemongrass, ginger, turmeric, and kaffir lime leaves until finely ground. This will be used to season the chicken.
    • Cut the chicken into small cubes, but not too thin. Fry the ground seasoning in a pan until fragrant.
    • Add a small amount of water to the pan with the fried spices, then add the cubed chicken. Stir in soy sauce and cook until the chicken is well coated and the flavors are absorbed.
  3. Assemble the Dish:

    • Cook the noodles according to the package instructions.
    • Place the cooked noodles in bowls and ladle the hot broth over them.
    • Top with the seasoned chicken and garnish with green vegetables of your choice.
  4. Final Touch:

    • Taste and adjust seasoning as needed. Serve hot and enjoy!
