Simple Beef Vegetable Soup

A comforting and nourishing dish, this simple beef vegetable soup combines tender beef with a colorful medley of vegetables, flavored with aromatic spices. Perfect for a quick yet satisfying meal, this recipe is easy to prepare and great for feeding a family.

Ingredients:

  • 1 ounce beef (approximately 28 grams), cut into small pieces
  • 1 carrot, peeled and sliced
  • Green beans, trimmed and cut into bite-sized pieces
  • Broccoli, cut into florets
  • Cabbage, chopped
  • Celery leaves, finely chopped
  • Spring onions, finely sliced

For the Spice Mix:

  • 4 shallots, finely chopped
  • 2 cloves garlic, minced
  • Ground black pepper, to taste
  • A pinch of ground nutmeg
  • Sugar, to taste
  • Salt, to taste
  • Seasoning, to taste

Instructions:

  1. Cook the Beef:
    In a large pot, bring water to a boil and add the beef pieces. Simmer until the beef is tender. This step may take approximately 30-40 minutes, depending on the size of the beef pieces.

  2. Prepare the Vegetables:
    While the beef is cooking, prepare the vegetables. Peel and slice the carrot, trim and cut the green beans, chop the cabbage, and cut the broccoli into florets.

  3. Cook the Vegetables:
    Once the beef is tender, add the prepared vegetables to the pot. Allow them to cook until they are tender but still crisp. This should take about 10-15 minutes.

  4. Make the Spice Mix:
    In a separate pan, heat a small amount of oil over medium heat. Add the chopped shallots and minced garlic. Sauté until fragrant and golden brown.

  5. Combine and Season:
    Add the sautéed shallots and garlic to the pot with the beef and vegetables. Stir well. Season the soup with ground black pepper, a pinch of ground nutmeg, sugar, salt, and seasoning to taste. Stir and let it simmer for another 5-10 minutes, allowing the flavors to meld together.

  6. Finish and Serve:
    Once the vegetables are cooked and the flavors have developed, taste and adjust the seasoning as needed. Garnish with finely chopped celery leaves and spring onions before serving.
