Title: Simple and Delicious Spicy Beef and Jando Stir-Fry

Ingredients:

  • 250 grams of beef
  • 250 grams of jando (beef tripe)
  • 5 shallots
  • 3 cloves of garlic
  • 5 green chilies
  • 5 bird’s eye chilies
  • Salt, to taste
  • Sugar, to taste
  • 2 tablespoons of oyster sauce
  • 2 tablespoons of soy sauce

Instructions:

  1. Prepare the Meat: Start by boiling the beef and jando (beef tripe) until tender. Once cooked, drain them well, and set aside the cooking water.

  2. Slice the Ingredients: Thinly slice the shallots, garlic, green chilies, and bird’s eye chilies.

  3. Sauté Aromatics: Heat a pan with a bit of oil and sauté the sliced shallots, garlic, and chilies until fragrant and golden brown.

  4. Add Sauces and Meat: Incorporate the oyster sauce and soy sauce into the pan. Stir well to combine the flavors. Next, add the beef and jando, tossing everything together until well-coated and aromatic.

  5. Simmer: Pour in the reserved cooking water. Allow the mixture to simmer until the liquid reduces and the dish is nearly dry.

  6. Season and Serve: Adjust the seasoning with salt and sugar to taste. Serve the spicy beef and jando stir-fry hot with steamed rice.
