For the Spice Paste:
- 10 red chilies (adjust according to your heat preference)
- 4 cloves of garlic
- 4 shallots
- 3 candlenuts
Instructions:
-
Prepare the Eggs and Tofu:
- Heat oil in a frying pan over medium heat. Once hot, carefully fry the hard-boiled eggs until they are golden brown and crispy on the outside. Remove and drain on paper towels.
- In the same pan, fry the cubed tofu until it turns golden brown. Remove and set aside.
-
Prepare the Spice Paste:
- Using a food processor or mortar and pestle, blend together the red chilies, garlic, shallots, and candlenuts until you achieve a smooth paste.

Cook the Spice Paste:
- Heat a small amount of oil in a pan over medium heat. Add the spice paste and sauté until it becomes fragrant and the oil starts to separate from the paste.
-
Simmer the Spice Paste:
- Add a splash of water to the pan with the spice paste and bring it to a boil. Allow it to simmer for a few minutes until the flavors meld together and the mixture thickens slightly.
-
Combine Ingredients:
- Gently add the fried eggs and tofu into the pan with the spice paste. Stir well to ensure the eggs and tofu are evenly coated with the paste.
- Add the finely sliced kaffir lime leaf to the pan.
-
Season and Finish:
- Season with salt, sugar, and chicken seasoning powder according to your taste preferences. Continue to cook until the liquid reduces and the sauce clings nicely to the eggs and tofu.
- Taste and adjust seasoning if needed.
-
Serve:
- Once the sauce has thickened and the eggs and tofu are well-coated, remove from heat.
- Serve hot as a main dish or side dish with steamed rice.
