Frozen Fruit Pops: A Refreshing Homemade Treat

Preparation Time: 20 minutes
Freezing Time: 2 hours
Total Time: 2 hours 20 minutes

Description:
Delight in these icy fruit pops that bring a burst of refreshing flavors and a creamy sorbet-like texture. The secret to their smoothness is partially freezing the fruits before blending them. This technique not only enhances the texture but also intensifies the fruit flavors. Feel free to swap in your favorite berries or other fruits, but make sure to include some banana in each mixture for the best consistency. This recipe, originally from Country Living (1992), makes for a perfect summer treat or a healthy snack for any time of the year. 🍓🍌🥝

Ingredients:

  • 2 ripe bananas 🍌
  • 2 kiwifruits 🥝
  • 2/3 cup fresh strawberries 🍓
  • 1/2 cup light corn syrup 🌽
  • 3/4 cup orange juice 🍊 (or enough to cover)

Yield: 6 pops

Instructions:

  1. Prepare the Fruit:

    • Several hours or a day before serving, prepare the fruit purees. Begin by placing the bananas, kiwifruit, and fresh strawberries in the freezer until they are partially frozen and firm. If you are using frozen strawberries, let them thaw slightly until just softened.
  2. Make the Orange Juice Base:

    • Pour the orange juice into a glass dish or pie plate. Freeze the juice until it is almost solid but still a bit slushy. This will help in creating a smooth texture when mixed with the fruit purees.
  3. Blend the Banana-Orange Mixture:

    • In a food processor or blender, combine 2 banana halves with 1 tablespoon of light corn syrup and the slushy orange juice. Blend until the mixture is completely smooth and well-pureed.
  4. Prepare the Kiwifruit Puree:

    • Puree the kiwifruit with 1 banana half and 1 tablespoon of light corn syrup. Blend until smooth, then divide the mixture between two 3-ounce metal timbale molds, two 5-ounce paper cups, or any 3-ounce popsicle molds you have on hand.
  5. Prepare the Strawberry Puree:

    • Blend the strawberries with the remaining banana half and 1 tablespoon of light corn syrup. Again, blend until smooth and pour the mixture into the remaining molds.
  6. Freeze the Pops:

    • Place all fruit-filled molds into the freezer. After about 45 minutes, insert popsicle sticks into the center of each pop. This step will help the sticks stay in place as the pops continue to freeze.
  7. Final Freezing:

    • Let the pops freeze for several hours or overnight until they are completely solid.
  8. Serve and Enjoy:

    • To serve, quickly dip the molds into hot water to loosen the pops. Hold the stick and gently pull the pop out of the mold. If you are using paper cups, peel the paper away before serving.
