Ingredients

  • 7 large eggs
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 green onion, finely sliced
  • 3 red chilies, sliced in half and finely chopped
  • 100 grams grated cheddar cheese
  • Freshly ground black pepper, to taste
  • 1 sausage (such as Sony Gold), cut into 6 lengthwise pieces and finely sliced
  • 100 grams chicken skin, cut into small pieces
  • Olive oil or cooking oil for sautéing

Instructions

  1. Prepare Ingredients: Gather all the ingredients and prepare them as described. Finely chop the onion, mince the garlic, and slice the green onions and red chilies. Grate the cheddar cheese and cut the sausage and chicken skin into small pieces.

  2. Sauté Vegetables and Meats: Heat a pan over medium heat with a splash of oil. Add the minced garlic and chopped onion. Sauté until they are golden brown and fragrant. Add the chicken skin and sausage pieces to the pan, cooking until they are well browned and cooked through. Stir in the red chilies and green onions, and cook for another 1-2 minutes.

  3. Prepare the Egg Mixture: In a separate bowl, crack the eggs and beat them well. Mix in the grated cheddar cheese and season with freshly ground black pepper.
