Pepes Tahu Without Banana Leaves

Ingredients:

  • 10 sprigs of basil
  • 5 kaffir lime leaves
  • 6 pieces of tofu
  • 4 pieces of lime leaves
  • 1 medium tomato
  • Spice Paste:
    • 8 shallots
    • 4 cloves garlic
    • 2 red Thai chilies
    • 1 teaspoon ground turmeric or 2 cm fresh turmeric
    • 6 peppercorns
    • 1 roasted candlenut
    • Salt and sugar to taste

Instructions:

  1. Prepare the Spice Paste: Begin by blending the shallots, garlic, red Thai chilies, turmeric, peppercorns, and roasted candlenut until you have a smooth paste. Adjust salt and sugar according to your taste.

  2. Prepare the Tofu and Tomato: Cut the tofu and tomato into long slices or according to your preference.

  3. Assemble the Dish: Line a baking dish with basil leaves and kaffir lime leaves. Arrange the tomato slices on top of the basil. Spread the tofu slices with the prepared spice paste, then place them over the tomatoes. Finally, place additional lime leaves on top.

  4. Steam: Cover the baking dish and steam over medium heat for 15 minutes, ensuring the tofu is fully cooked and the flavors are well combined.
