Instructions

Step 1: Prepare the Dough

  1. Preheat the Oven: Preheat your oven to 180°C (350°F) for about 10 minutes.
  2. Mix Dry Ingredients: In a mixing bowl, combine whole wheat flour, all-purpose flour, active dry yeast, sugar, and softened butter. Use your fingers to rub the butter into the flour mixture until it resembles crumbs.
  3. Knead the Dough: Gradually add water and knead the mixture into a soft dough. Transfer the dough to a flat surface and knead for about 8-10 minutes until smooth and elastic.
  4. Rest the Dough: Shape the dough into a ball, place it back in the bowl, cover with a damp cloth, and set it aside in a warm place. Allow it to rise until it doubles in size, about 1 hour.

Step 2: Prepare the Pumpkin and Cheese Filling

  1. Cook the Pumpkin: Place the grated pumpkin in a pressure cooker, add a small amount of water, salt, and nutmeg powder. Cook for 3 whistles, then let the pressure release naturally. Once done, mash the pumpkin into a smooth paste.
  2. Sauté Aromatics: In a non-stick pan, heat a bit of oil over medium heat. Add garlic and sliced onions, sautéing until the onions turn soft and translucent.
  3. Combine Ingredients: Add the mashed pumpkin to the pan with the onions and garlic. Season with thyme, red chili flakes, salt, and pepper. Stir well, then add milk and cheese, mixing until creamy. Set aside to cool.

Step 3: Assemble and Bake the Rolls

  1. Shape the Dough: Punch down the risen dough and knead briefly. Divide the dough into medium-sized balls.
  2. Add Filling: Roll each ball into a rectangle. Lightly brush the surface with oil, place a spoonful of the pumpkin mixture at one end, and roll up, sealing the edges by pinching with your fingers.
  3. Prepare for Baking: Place each roll on a baking tray greased with butter, leaving a bit of space between them. Allow them to rest for 5 minutes.
  4. Bake: Brush the tops of the rolls with milk and bake for 30 minutes. Afterward, take the rolls out, brush with honey (if desired), and bake for an additional 15 minutes until golden brown.
