Ingredients:

  • 1 Baguette
  • 10 to 12 Button mushrooms (cleaned and sliced)
  • Half a bunch of Mint Leaves (Pudina)
  • 1 Lemon
  • 4-5 cloves of Garlic
  • 3-4 Cherry tomatoes (quartered)
  • Salt and Pepper, to taste
  • Olive oil (for cooking and brushing)

Preparation Time: 10 minutes
Cooking Time: 20 minutes

Instructions:

  1. Start by preparing the mushroom topping. Blitz mint, garlic, salt, pepper, and olive oil in a food processor until a coarse texture is achieved. Alternatively, mince the mint and garlic finely with a knife.

  2. Heat 1 tablespoon of olive oil in a pan and sauté the cleaned and sliced mushrooms until all moisture evaporates and they become dry.

  3. Once the mushrooms are ready, add the coarsely ground mint-garlic mixture along with a tablespoon of freshly squeezed lemon juice. Cook for an additional minute, then remove from heat.

  4. To prepare the baguette, slice it and brush both sides with olive oil. Bake the slices in a preheated 180°C oven for 10 minutes or until golden brown and crisp. Alternatively, toast the slices in a pan over medium heat until crisp and browned.

  5. Assemble the Herb Mushroom Bruschetta by topping each toasted baguette slice with the warm mushroom mixture and quartered cherry tomatoes. Optionally, sprinkle with chili flakes and drizzle with more olive oil for extra flavor.
