Fried Mixed Squid and Shrimp with Mayonnaise and Yogurt Sauce

Ingredients

Squid 500g
Greek yogurt 200g
Fine salt to taste
Chives (fresh) 1 tbsp
Mustard 15g
Whole egg 1
Egg yolk 1
Vegetable oil (for frying) 190g
Lemon juice 15g
Black pepper 1 pinch
White wine vinegar 3g
Peanut oil (for frying) 1 liter

Instructions

  1. Prepare the Sauce:
    Begin by preparing the mayonnaise and yogurt sauce. In a small bowl, crack the whole egg and add the egg yolk. Pour in the white wine vinegar and mix with a fork. Transfer the egg mixture into a tall glass or measuring cup. Using an immersion blender, blend the ingredients while slowly drizzling in the vegetable oil.

  2. Once the mixture begins to emulsify, add the lemon juice and stir thoroughly. Then, mix in the mustard for a creamy, tangy flavor. Finally, chop the fresh chives and fold them into the sauce. Place the sauce in the refrigerator to chill until ready to use.

  3. Prepare the Seafood:
    Begin with the shrimp. Start by removing the heads and peeling off the shells. Set the shrimp aside.

  4. For the squid, rinse them under cold running water. Remove the cartilage pen and peel away the skin using a small knife. Cut the squid into 1 cm thick rings, discarding the rest.

  5. Frying:
    Heat the peanut oil in a large, deep pan. It should be hot enough to fry, ideally reaching 170°C (340°F).

  6. While the oil is heating, lightly coat the squid and shrimp in the all-purpose flour. Use a sieve to shake off any excess flour.

  7. Carefully add the squid rings to the hot oil in batches, ensuring not to overcrowd the pan. Fry for a few minutes until golden brown and crispy. Use a slotted spoon to remove the squid from the oil and place it on a paper towel-lined plate to drain excess oil.

  8. Next, fry the shrimp in the same manner. Make sure they cook evenly until golden and crispy. Once fried, place them on the paper towel to remove excess oil.

  9. Serving:
    Season both the squid and shrimp with a pinch of fine salt while still hot. Serve the crispy seafood with the chilled mayonnaise and yogurt sauce on the side for dipping.
