Prepare the Sauce:
Begin by preparing the mayonnaise and yogurt sauce. In a small bowl, crack the whole egg and add the egg yolk. Pour in the white wine vinegar and mix with a fork. Transfer the egg mixture into a tall glass or measuring cup. Using an immersion blender, blend the ingredients while slowly drizzling in the vegetable oil. -
Once the mixture begins to emulsify, add the lemon juice and stir thoroughly. Then, mix in the mustard for a creamy, tangy flavor. Finally, chop the fresh chives and fold them into the sauce. Place the sauce in the refrigerator to chill until ready to use.
