Instructions:

  1. Prepare the Eggplants:

    • Roast the eggplants in a preheated static oven at 180°C (350°F) for about 60 minutes, or for a faster option, bake them at 160°C (320°F) in a fan-assisted oven for approximately 50 minutes. The eggplants should be tender and soft when pierced with a fork.
  2. Prepare the Caviar:

    • After roasting, remove the eggplants from the oven. Allow them to cool slightly before carefully peeling off the skin with a knife.
    • Using a spoon, scoop out the soft, pulpy flesh and place it into a fine-mesh strainer over a bowl to drain any excess liquid. This step ensures a thicker consistency for the caviar.
    • Once the excess moisture has drained, transfer the eggplant flesh to a food processor or blender. Add a pinch of salt and blend until you achieve a dense and smooth puree.
  3. Add Flavor:

    • Pour the eggplant puree into a small bowl. Squeeze the juice of half a lemon into the mixture, enhancing its freshness and tanginess.
    • Add the sweet paprika and finely chopped fresh mint to the bowl. Stir well to combine all the flavors, making sure the spices are evenly distributed throughout the mixture.
