Pandoro and Berry Tiramisu Recipe

Pandoro 2 loaves
Mixed Berries (e.g. strawberries, raspberries, blueberries) 250g
Mascarpone Cheese 250g
Granulated Sugar 80g
Eggs 2
Whole Milk to taste
White Chocolate Chips to taste

Instructions:

  1. Prepare the Eggs: Begin by separating the egg yolks from the egg whites. Place the egg whites into a mixing bowl and beat them with electric beaters until stiff peaks form.

  2. Mix the Yolks: In another bowl, combine the egg yolks with the sugar. Whisk together with the electric beaters until smooth and creamy.

  3. Add the Mascarpone: Gently fold the mascarpone cheese into the yolk and sugar mixture until well incorporated, creating a smooth cream.

  4. Slice the Pandoro: Take the pandoro and cut two slices, each approximately 2 cm thick. Slice them horizontally.

  5. Assemble the Layers: In a 20 cm diameter transparent bowl or trifle dish, place the first slice of pandoro. Gently pour a small amount of whole milk over the slice to moisten it slightly.

  6. Layer the Cream: Spread half of the mascarpone cream over the first slice of pandoro. Then, layer half of the mixed berries (washed and dried).

  7. Repeat the Layers: Place the second slice of pandoro on top and repeat the layering with the remaining mascarpone cream and mixed berries.

  8. Final Touches: Top with white chocolate chips if desired for an added touch of sweetness and texture.

  9. Chill and Serve: Allow the tiramisu to chill in the refrigerator for at least a couple of hours, or even overnight, to allow the flavors to meld together. Serve chilled and enjoy!
