Instructions

To begin preparing your coffee crepes, start by brewing the coffee with a moka pot. You will need 200g of brewed coffee. Pour half of the coffee (100g) into a jug, where you’ve already added the milk, and set the remaining coffee aside for making the sauce later.

In a separate bowl, crack the eggs, and then pour in the milk combined with the coffee. Sift the flour directly into the bowl and whisk it until smooth. Add a pinch of salt and mix everything well.

While your crepe batter rests, prepare the filling. Roughly chop 50g of dark chocolate, and then add the granulated sugar. Stir everything together with a spatula, and then transfer the mixture to a piping bag for easy filling.

Now, focus on the sauce. Chop the remaining 150g of dark chocolate and place it in a bowl. Pour the remaining 70g of brewed coffee over the chocolate and stir until it melts completely. Set it aside—don’t worry if the sauce firms up as it cools; simply reheat it before serving.

Next, heat a crepe pan or a non-stick skillet and grease it lightly with a dollop of butter. Pour in enough batter to cover the surface, swirling the pan to distribute the mixture evenly. Let it cook for about a minute, or until small bubbles form on the surface, and the edges begin to lift. Flip the crepe and cook for another 30 seconds to 1 minute. Repeat this process until all the crepes are cooked.

For the filling, take a portion of the ricotta cream and pipe it onto the center of each crepe, swirling it around twice to cover. Fold the crepe into a half-moon shape, then fold it one more time into a triangle. Repeat with the remaining crepes.

Finally, reheat the chocolate coffee sauce and drizzle it over the filled crepes for a rich, velvety finish. Serve warm and enjoy your delicious Coffee Crepes!
