Instructions

  1. Prepare the Milk Mixture:
In a medium saucepan, combine the liquid milk, granulated sugar, cloves, orange peel, ground nutmeg, and cinnamon sticks. Heat the mixture over medium heat, stirring continuously until the sugar is completely dissolved.

In a separate small cup, dissolve the instant coffee powder in a little bit of hot water. Set this aside for later use.

Once the milk mixture reaches its first boil, remove it from the heat and stir in the dissolved coffee and vanilla extract. Allow the mixture to cool to room temperature before proceeding.

  2. Add Aguardiente and Strain:
After the milk mixture has cooled, add the aguardiente. To ensure a smooth texture, pass the mixture through a fine-mesh strainer into a large bowl or container, discarding the solids (cloves, orange peel, and cinnamon sticks).

  3. Churn the Ice Cream:
If you have an ice cream maker, pour the strained mixture into the machine and follow the manufacturer’s instructions to churn until it reaches a soft-serve consistency.

Alternative Method: If you do not have an ice cream maker, pour the mixture into a plastic container with a lid and place it in the freezer for 2 hours. After this time, remove it from the freezer and stir vigorously for a few minutes to break up any ice crystals. Return the mixture to the freezer and let it freeze for several hours, or until it is firm enough to scoop.

  4. Serve and Enjoy:
Once the Helado de Cola de Mono is fully frozen, scoop it into bowls or cones and enjoy this delightful Chilean treat! It pairs beautifully with fresh fruit or a drizzle of chocolate sauce for added indulgence.

Tips:

  • For a more pronounced flavor, consider letting the mixture infuse for a few hours in the refrigerator before churning or freezing.
  • Serve with a sprinkle of ground cinnamon or chocolate shavings for an elegant touch.

Bring the taste of Chile into your kitchen with this delightful Helado de Cola de Mono, a creamy and unique ice cream that combines traditional flavors into a refreshing treat that your friends and family will love!
