Helado de Borgoña

Indulge in the rich flavors of Helado de Borgoña, a delightful frozen treat that combines the depth of red wine with the sweetness of strawberries. Perfect for a warm day or a special gathering, this recipe offers a unique twist on traditional sorbet.

Ingredients

Ingredient Quantity
Good quality red wine (preferably Chilean) 2 cups
Granulated sugar 3/4 cup
Cinnamon stick (optional) 1 piece
Fresh strawberries (puréed) 1 cup
Heavy cream 3/4 cup

Instructions

  1. Prepare the Wine Mixture: In a saucepan, combine the red wine, granulated sugar, and cinnamon stick (if using). Bring to a gentle boil and cook for several minutes until the sugar has completely dissolved. To eliminate the alcohol, let it simmer for an additional 8 to 10 minutes. For those experienced in cooking, you may choose to flambé the mixture instead.

  2. Cool Down: Allow the mixture to cool completely, then remove the cinnamon stick.

  3. Combine Ingredients: In a mixing bowl, combine the cooled wine mixture with the puréed strawberries and heavy cream. Stir until well blended.

  4. Chill the Mixture: If you have an ice cream maker, pour the mixture into it and churn according to the manufacturer’s instructions. If you don’t have an ice cream maker, pour the mixture into an airtight plastic container and place it in the freezer. After about 2 hours, remove it from the freezer and whisk vigorously for a few minutes to aerate the mixture, then return it to the freezer for another couple of hours to firm up.
