Chocolate-Hazelnut Biscuits with Jam

Instructions:
- 
Prepare the dough: Begin by cutting the cold butter into small cubes. Use a food processor to blend it until it forms a crumbly texture. Transfer the mixture onto a clean work surface and create a well in the center, like a fountain. 
- 
Add the wet ingredients: Crack the egg into the center of the flour mixture. Split the vanilla bean lengthwise, scraping out the seeds with a knife. Add the vanilla seeds, icing sugar, and hazelnut paste into the well. Use your hands to mix everything quickly until the dough comes together.

Incorporate the cocoa: Sift the cocoa powder into the dough and knead gently to ensure it’s evenly incorporated.

Chill the dough: Shape the dough into a disc and wrap it in plastic wrap. Place it in the fridge for at least one hour to chill and firm up.

Roll out the dough: After the chilling time, remove the dough from the fridge and roll it out on a lightly floured surface to about half a centimeter thick.

Shape the biscuits: Using a 5 cm round cookie cutter, cut out 20 discs from the dough. For half of the discs, use a 2.5 cm heart-shaped cutter to cut out the centers, creating a ‘window’ in each.

Bake: Preheat the oven to 180°C (or 160°C for fan-assisted ovens). Place the cut-out biscuits on a baking sheet lined with parchment paper. Bake for approximately 10 minutes if using a conventional oven (or 5 minutes for a fan oven), or until they are lightly golden on the edges.

Cool the biscuits: Once baked, remove the biscuits from the oven and let them cool completely on a wire rack. 
- 
Assemble the biscuits: Once cooled, spread a layer of red fruit jam, such as raspberry, on the solid discs. Carefully place the biscuits with the heart-shaped centers on top to create the finished sandwiches.
