Instructions:

To create these delightful Olympic Rings Cookies, begin by preparing the dough. Place the sifted flour, cold butter, and vanilla bean seeds into a food processor. Blend the ingredients until they form a dough-like consistency. Once the dough has come together, knead it briefly until smooth.

Next, roll the dough out to a thickness of about half a centimeter (approximately 5mm). Using a round cutter, cut out circles to form the base shape of the cookies. Then, use a smaller cutter (about 6 cm) to cut out a hole in the center of each cookie, creating the iconic ring shape.

While the cookies are chilling in the fridge, divide the powdered sugar and water mixture into five separate bowls, each representing one of the five Olympic rings. Add a few drops of each food coloring to the bowls – red, black, green, blue, and yellow – until you achieve vibrant, rich colors.

Once the dough has chilled, gently paint the surface of each ring with the colored icing, alternating the colors to mirror the Olympic rings’ iconic pattern. Allow the decorated cookies to dry on a cooling rack for a few hours to ensure the colors set properly.
