Topped with grated cauliflower mixed with zesty green onion and sprinkled over the bed of greens, it’s a symphony of textures and flavors that will captivate your taste buds. Perfect for any winter gathering or as a quick, flavorful meal in under 30 minutes!

Ingredients:

  • 2 heads romaine lettuce
  • 3/4 cup mayonnaise
  • 3/4 cup grated parmesan cheese
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon freshly ground pepper
  • 1/2 head cauliflower
  • 1/2 cup crumbled bacon
  • 1/2 cup crumbled blue cheese
  • 4 green onion tops, chopped

Instructions:

Step Description
1 Prepare Lettuce: Trim the bases off the romaine lettuce heads. Separate the leaves, rinse them thoroughly, and pat them dry using a kitchen towel or paper towels.
2 Prepare Dressing: In a small bowl, combine mayonnaise, grated parmesan cheese, fresh lemon juice, and freshly ground pepper. Mix well until all ingredients are evenly incorporated. Set aside.
3 Cut Lettuce: Stack the lettuce leaves on a cutting board and cut them crosswise into small, bite-sized pieces, enough to measure approximately 9 cups. Transfer the chopped lettuce to a large salad bowl.
4 Toss with Dressing: Pour the prepared dressing over the chopped lettuce in the salad bowl. Toss well to ensure that all the lettuce leaves are evenly coated with the creamy dressing. Set the bowl aside.
5 Prepare Cauliflower: Wash the cauliflower head and trim any excess leaves or stem. Cut the cauliflower head in half. Grate one of the halves using a box grater or a food processor with a grating attachment.
6 Mix Ingredients: In a separate mixing bowl, combine the grated cauliflower with the crumbled bacon, crumbled blue cheese, and chopped green onion tops. Mix everything together until evenly distributed.
7 Assemble Salad: Sprinkle the cauliflower mixture evenly over the dressed lettuce in the salad bowl. Ensure that the toppings are spread out to cover the entire surface of the salad.
8 Serve: Your Snow On The Mountain Salad is now ready to be served! Enjoy the delightful combination of flavors and textures in every bite. Serve as a side dish or as a refreshing main course.
