Creamy Chicken Noodle Soup Recipe

Ingredients:

  • 3 cups water
  • 2 cups milk
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 lb chicken breast, diced
  • 2 tbsp olive oil or butter
  • 2 cups pasta of your choice
  • 2 bouillon cubes
  • 1 1/2 cups diced mixed vegetables (carrots, celery, onion)

Instructions:

  1. Prepare Roux: In a small bowl, mix the softened butter and flour together until thoroughly combined. Set aside for later.

  2. Brown Chicken: In a Dutch oven or large pot, heat 2 tablespoons of olive oil or butter over medium-high heat. Add the diced chicken breast and brown it until golden on all sides. Once done, remove the chicken from the pot and set it aside.

  3. Saute Vegetables: To the same pot, add the diced mixed vegetables and sauté for 2-3 minutes until they begin to soften and become fragrant.

  5. Cook Noodles: Once the liquid is boiling, add the pasta to the pot. Reduce the heat to medium and simmer until the noodles and vegetables are almost tender.

  6. Return Chicken: Add the browned chicken back into the pot, along with the seasoning blend. Stir to combine all the ingredients evenly.

  7. Thicken Soup: Take about half a cup of the hot liquid from the pot and gradually add it to the bowl with the flour/butter mixture. Mix thoroughly until smooth. Then, pour this mixture back into the pot, stirring constantly to prevent lumps from forming.

  8. Simmer: Allow the soup to simmer for an additional 5 minutes or until it reaches your desired thickness and the flavors meld together beautifully.

  9. Season and Serve: Season the soup with salt and pepper according to your taste preferences. Serve hot, accompanied by slices of crusty Italian bread for dipping and savoring every comforting bite.
