Fava Bean and Cheese Sandwich

Ingredients

Fava beans (peeled) 100g
Multigrain whole wheat bread slices 6 slices
Stracciatella (fresh cheese) 140g
Pecorino cheese 80g
Extra virgin olive oil 20g
Sun-dried tomatoes (packed in oil) 6 pieces
Lettuce leaves q.b. (to taste)
Fine salt q.b. (to taste)
Black pepper q.b. (to taste)

Instructions

  1. To begin preparing the fava bean and cheese sandwich, start by placing the peeled fava beans in a bowl. Season them with salt, pepper, and olive oil. Using an immersion blender, blend the fava beans until you achieve a smooth puree.

  2. While preparing the bean mixture, toast the slices of multigrain bread on one side only using a grill or pan, until just crisp and golden. Each sandwich will need three slices of bread.

  3. Next, thinly slice the Pecorino cheese and set it aside. Drain the sun-dried tomatoes from their oil and cut them into thin strips.

  4. Now you are ready to assemble the sandwich. Start with the first slice of toasted bread, spread half of the sliced Pecorino cheese on it. Then, generously spread a layer of the fava bean puree over the cheese. Add half of the sun-dried tomato strips on top of the bean spread, then place another slice of bread to complete the base of the sandwich.

  5. Spread half of the stracciatella cheese (fresh cheese) onto the second slice of bread and place it on top of the sandwich. Top the cheese with a few washed and dried lettuce leaves for added crunch and freshness. Drizzle a little olive oil over the lettuce for extra flavor.

  6. Finally, close the sandwich with the last piece of toasted bread, creating a delicious, fresh stack of flavors.

  7. Repeat the steps for the second sandwich with the remaining ingredients, and your savory fava bean and cheese sandwich is ready to enjoy. These sandwiches are perfect for a light, wholesome meal.
