Ginger Peanut Soup Recipe

🥦 Description: Did you know that peanuts are not really nuts but are actually a type of bean? Peanuts are sprayed with an array of pesticides and herbicides, so try and use organic peanut butter in this recipe. It will taste better. (This recipe is from the cookbook “How It All Vegan”).

Ingredients:

Quantity Ingredient
1 1/2 Broccoli
1 1/2 Cauliflower
1 Onion
1 Fresh ginger
3 cloves Garlic
1/4 tsp Cayenne pepper
1/2 tsp Salt
1/2 tsp Pepper
2 tbsp Olive oil
3 cups Water
1 can (14 oz) Diced tomatoes
1/2 cup Organic peanut butter

Instructions:

  1. Saute Vegetables: In a large soup pot, heat olive oil over medium heat. Add the broccoli, cauliflower, onions, ginger, garlic, cayenne, salt, and pepper. Saute until the vegetables are tender, stirring occasionally.

  2. Add Stock and Tomatoes: Once the vegetables are tender, add the water, diced tomatoes, and organic peanut butter to the pot. Stir well to combine.

  3. Simmer: Reduce the heat to low and let the soup simmer for about 20 minutes, allowing the flavors to meld together. Stir occasionally to prevent sticking.

  4. Serve: Once the soup is ready, ladle it into bowls and serve hot. Optionally, garnish with a sprinkle of chopped peanuts or fresh cilantro for extra flavor and texture.
