Instructions

Step 1: To prepare the matcha roll cake, start by making the sponge base. Break the eggs into a mixing bowl and add 80g of sugar. Whisk until the mixture is light and fluffy.

Step 2: Sift the all-purpose flour and matcha powder together. Gradually fold them into the egg mixture using a spatula, mixing gently from the bottom to the top to keep the air in the batter. This will create a smooth and uniform consistency.

Step 3: Add the baking powder and gently incorporate it into the batter, ensuring it’s well distributed.

Step 4: Line a 30×40 cm baking sheet with parchment paper and pour the batter onto it. Smooth out the surface evenly with a spatula, then bake at 180°C (350°F) for about 12-15 minutes, or until the cake is lightly golden and springy to the touch.

Step 5: Once the cake is baked, carefully invert it onto a clean sheet of parchment paper. Peel off the parchment paper from the bottom of the cake, then gently roll the cake with the new parchment paper. Let it cool down slightly before unrolling it.

Step 6: In a separate bowl, whip the heavy cream until soft peaks form. Add the sweetened condensed milk and fold gently until everything is combined into a creamy, smooth filling.

Step 7: Once the cake has cooled to room temperature, unroll it and spread the condensed milk cream evenly over the surface. Be sure to spread it all the way to the edges.

Step 8: Roll the cake back up carefully, trimming the edges if necessary to make a neat roll.

Step 9: Wrap the rolled cake in plastic wrap and refrigerate it for at least 1 hour to allow it to firm up.
