Whole milk 500g
Water 500g
Granulated sugar 150g
Vanilla bean 1

Biscotti 75g
Fresh blueberries To taste

Instructions:

  1. Prepare the Rice Base:
    Begin by pouring the water into a large saucepan. Add the rice and bring the mixture to a gentle simmer over low heat. Allow it to cook for about 15 minutes, or until the water has been absorbed by the rice.

  2. Make the Pudding:
    Once the water is absorbed, add the granulated sugar, whole milk, and the seeds scraped from the vanilla bean pod to the pot. Stir well with a wooden spoon to ensure the sugar dissolves evenly. Continue to cook the mixture on very low heat for approximately 35 minutes, stirring occasionally. The consistency should be creamy, and the rice should be fully cooked and tender.

  3. Cool and Set:
    Remove the pot from the heat and discard the vanilla bean pod. Let the rice pudding cool down to room temperature. Once it has cooled, transfer it to the fridge and allow it to chill for at least 2 hours until it has firmed up.

  4. Assemble the Dessert:
    After the pudding has chilled, break the biscotti into large crumbs using your hands. Layer the biscotti pieces on top of each serving of chilled rice pudding. Decorate each serving with fresh blueberries and a few mint leaves for a refreshing touch.

  5. Serve:
