Labaneh, also known as yogurt cheese, is a versatile ingredient that can elevate various dishes, from pasta to sandwiches. In this recipe, we’re using it as a creamy sauce for angel hair pasta, though it pairs well with any pasta variety, especially tortellini. The process involves straining yogurt for a minimum of 8 hours to achieve the desired thickness, resulting in a delightful cheese that can be refrigerated for several days. Note that sometimes it may take up to 2 days for the yogurt to reach the desired consistency, so plan accordingly. The preparation time for the yogurt cheese is included in the cook time.

Ingredients:

  • 1 cup nonfat plain yogurt
  • 1/2 clove garlic (optional)
  • 1/2 pound angel hair pasta
  • 1/2 tablespoon unsalted butter
  • 1/4 teaspoon sweet paprika
  • Salt and pepper to taste

Instructions:

Step Description
1 Yogurt Cheese (Labaneh): Line a strainer with 2 layers of cheesecloth. Place the strainer over a bowl and pour the yogurt into it. Let it sit at room temperature for at least 8 hours or until it becomes very thick. If using garlic, press it through a garlic press and stir it into the thickened labaneh. Refrigerate until ready to use.
2 Pasta: Ensure the labaneh is at room temperature. Boil the pasta in salted water until it’s al dente. Drain the pasta and return it to the pot, stirring until all the liquid has evaporated.
3 In a small saucepan, melt the butter over low heat. Add the paprika to the melted butter and mix well.
4 Toss the butter mixture and yogurt cheese with the cooked pasta until well combined. Season with salt and pepper to taste.
5 Serve the pasta with Turkish yogurt sauce immediately, garnished with additional paprika if desired. Enjoy your creamy and flavorful dish!
