Simple Stir-Fried Vegetable Eggs

Ingredients

  • 3 carrots
  • 10 green beans
  • 1/2 cabbage
  • 1/2 cauliflower
  • 2 eggs, beaten

Seasoning:

  • 2 cloves garlic
  • 2 shallots
  • 3 bird’s eye chilies
  • 1 sachet oyster sauce
  • 5 tablespoons chili sauce
  • 1/2 teaspoon sesame oil (optional)
  • A little oil for sautéing
  • Water as needed

Instructions

  1. Prepare the Vegetables:
    • Trim and clean all the vegetables thoroughly.
    • Cut the carrots, green beans, cabbage, and cauliflower into bite-sized pieces.
  2. Cook the Eggs:
    • In a frying pan, scramble the beaten eggs until fully cooked. Set aside.
  3. Prepare the Seasoning:
    • Thinly slice the garlic, shallots, and bird’s eye chilies.
  4. Sauté the Vegetables:
    • Heat a little oil in a pan over medium heat.
    • Add the sliced garlic, shallots, and chilies. Sauté until fragrant.
    • Add the prepared vegetables to the pan.
    • Pour in enough water to help soften the vegetables, stirring occasionally.
  5. Add the Sauces:
    • Once the vegetables begin to soften, add the oyster sauce, chili sauce, and sesame oil (if using). Mix well to coat the vegetables evenly.
  6. Combine with Eggs:
    • Add the scrambled eggs back into the pan. Stir everything together until well combined.
  7. Serve:
    • Once everything is mixed and heated through, remove from the heat. Serve hot with rice or as a standalone dish.
