Ingredients:

  • 1 cup light brown sugar
  • 1/4 cup boiling water
  • 1 1/2 cups cranberries
  • 1 1/2 cups diced apple
  • 1 cup diced celery
  • 1/2 cup chopped pecans

Instructions:

Step Instruction
1 In a large heat-proof bowl, combine the gelatin mix and brown sugar.
2 Add the boiling water to the bowl and stir until the mixture is fully dissolved.
3 Cover the bowl and chill the mixture in the refrigerator for about 45 minutes, or until it thickens to the consistency of raw egg whites.
4 Once the mixture has thickened, stir in the cranberries, diced apple, celery, and chopped pecans until well combined.
5 Pour the mixture into an ungreased 6-cup mold, cover it, and chill in the refrigerator for 6-8 hours or until very firm.
6 To unmold the relish, carefully dip the mold in warm (not hot) water for 5-10 seconds. Be cautious not to let the water be too hot or leave the mold submerged for too long, as this may cause the gelatin to melt.
7 Remove the mold from the water and loosen the edges of the mixture with a knife.
8 Place a serving platter upside down over the mold, and invert it onto the platter.
9 Slice the molded relish and serve chilled alongside your favorite holiday dishes.
