  • 350g spaghetti
  • 3 tbsp fresh flat-leaf parsley, chopped
  • Freshly ground black pepper, to taste

Instructions:

Step Description
1 Combine the extra virgin olive oil, thinly sliced garlic, and finely chopped red chilies in a small frying pan. Cook over very low heat until the garlic becomes a very pale golden color, which should take about 10-15 minutes.
2 If things are moving too fast in the frying pan, you can use a simmer mat or flame tamer to control the heat and prevent the garlic from burning.
3 Meanwhile, cook the spaghetti in plenty of salted boiling water until it reaches the desired level of doneness.
4 Once the spaghetti is cooked, drain it, reserving a small jugful of the cooking water.
5 Turn the cooked spaghetti into a heated serving dish.
6 Pour over the hot olive oil mixture with garlic and chilies, then add the chopped parsley. Toss everything together thoroughly to ensure the spaghetti is evenly coated with the flavorful oil.
7 If the pasta seems a bit dry, you can add a little of the reserved cooking water to loosen it up and create a silky sauce.
8 Serve the Spaghetti with Olive Oil, Garlic, and Chilies immediately, garnished with additional freshly chopped parsley and a sprinkle of freshly ground black pepper if desired.
