Warm Brown Rice with Shrimp, Leeks, and Almonds

Instructions:

Begin by preparing the leeks: slice them thinly (approximately 5 mm) and discard the root ends.

Heat a small amount of extra virgin olive oil in a pan over medium heat. Add the sliced leeks and make sure the pieces don’t overlap. Sprinkle lightly with salt and allow them to sauté for a few minutes. Add the brown sugar to the pan, stirring occasionally, allowing the leeks to caramelize slightly as they soften.

Meanwhile, bring a pot of salted water to a boil. Add the brown rice and cook for about 10 minutes, until just tender. Once the rice is done, drain it and set it aside.

Transfer the cooked leeks to a separate bowl and set aside for later.

Remove the shells from the shrimp, and set the shrimp aside.

In the same pan where you cooked the leeks, add a little more olive oil and heat it over high heat. Place the shrimp in the pan and sear them for about 1 minute on each side until cooked through. Add the soy sauce to the shrimp and stir well to coat.

Toast the whole almonds in the same pan, stirring occasionally, until golden and fragrant. Remove from the pan and chop them roughly.

To assemble the dish, transfer the warm rice to a large bowl. Drizzle with extra virgin olive oil and stir to coat the grains evenly. Add the sautéed leeks, chopped almonds, and a pinch of black pepper to the rice. Mix everything together thoroughly.

To plate, use a 10 cm ring mold to press the rice into a neat shape on each plate. Carefully remove the mold and top the rice with the sautéed shrimp and a sprinkle of black sesame seeds.
