Instructions:

Cook the Lentils:
- First, rinse the arhar dal, pilli moong dal, and masoor dal thoroughly.
- In a pressure cooker, add all the dal varieties along with the grated ginger, chopped green chilies, cinnamon stick, bay leaf, chopped tomatoes, chopped pumpkin, and turmeric powder.
- Add 2 ½ cups of water and salt to taste. Stir everything well.
- Close the lid of the cooker and cook for 2 whistles on medium heat.
- After 2 whistles, reduce the heat and let it cook for another 4 minutes on low flame. Turn off the heat and allow the pressure to release naturally.

Prepare the Tadka:
- Heat ghee in a small pan over medium heat.
- Once the ghee is hot, add cumin seeds, crushed garlic, and dry red chilies.
- Sauté for about 15 seconds, until the garlic turns golden brown and aromatic.

- Once the pressure has released from the cooker, open the lid and gently stir the cooked dal.
- Pour the prepared garlic ghee tadka over the dal and mix it well.

- Transfer the dal to a serving bowl and serve hot.
