Pumpkin Dal with Garlic Tadka (Recipe in English)

Ingredients

Arhar Dal (Toor Dal) 1/4 cup
Pilli Moong Dal (Yellow Moong) 1/4 cup
Masoor Dal (Red Lentils) 1/4 cup
Ginger 1-inch piece, grated
Green Chilies 2, chopped
Dalchini (Cinnamon Stick) 1-inch piece
Tej Patta (Bay Leaf) 1
Tomatoes 2, finely chopped
Pumpkin (Kaddu) 250 grams, peeled and chopped
Salt As per taste
Oil As required
Turmeric Powder 1/2 teaspoon
Ghee 1 teaspoon
Cumin Seeds (Jeera) 1 teaspoon
Garlic 4 cloves, crushed
Dry Red Chilies 2

Preparation Time: 15 minutes

Cooking Time: 30 minutes

Instructions:

  1. Cook the Lentils:

    • First, rinse the arhar dal, pilli moong dal, and masoor dal thoroughly.
    • In a pressure cooker, add all the dal varieties along with the grated ginger, chopped green chilies, cinnamon stick, bay leaf, chopped tomatoes, chopped pumpkin, and turmeric powder.
    • Add 2 ½ cups of water and salt to taste. Stir everything well.
    • Close the lid of the cooker and cook for 2 whistles on medium heat.
    • After 2 whistles, reduce the heat and let it cook for another 4 minutes on low flame. Turn off the heat and allow the pressure to release naturally.
  2. Prepare the Tadka:

    • Heat ghee in a small pan over medium heat.
    • Once the ghee is hot, add cumin seeds, crushed garlic, and dry red chilies.
    • Sauté for about 15 seconds, until the garlic turns golden brown and aromatic.
  3. Finish the Dal:

    • Once the pressure has released from the cooker, open the lid and gently stir the cooked dal.
    • Pour the prepared garlic ghee tadka over the dal and mix it well.
  4. Serve:

    • Transfer the dal to a serving bowl and serve hot.
    • This Pumpkin Dal with Garlic Tadka is best enjoyed with a side of boondi raita and bhakri (Indian flatbread) for a wholesome meal.
