- Trim excess fat and skin from the chickens, then wash and pat dry with kitchen paper.
- In a large pan, place the chickens with half of the chopped onions, 1 bay leaf, and the coriander sprigs.
- Pour enough water to cover the chicken and bring to a boil.
- Cover and simmer for 1 to 1 1/2 hours until fully cooked.
- Allow the chicken to cool in the liquid for about 30 minutes.
- Drain the chicken, discard the skin, and slice the meat into bite-sized pieces. Set aside.

- Heat oil in a pan and sauté the remaining chopped onions, bay leaf, coriander seeds, ground cumin, and curry powder for 2-3 minutes.

- Press the mixture through a sieve and allow it to cool.
