Crispy Oven Potatoes

Description:
These potatoes come out nice and brown and crispy. Even if there is 1/4 cup of oil, it’s less than deep frying! You don’t have to peel the potatoes, in fact, I only scrub them thoroughly before slicing them.

Ingredients:

1/4 cup Lite olive oil
4 cloves Garlic
1 tsp Dried rosemary
3 Russet potatoes
Fresh rosemary sprigs

Instructions:

  1. Preheat oven to 400°F (200°C). Spray a cookie sheet with lite olive oil or other vegetable oil.

  2. In a large bowl, combine the lite olive oil, salt, pepper, minced garlic, and dried rosemary. Mix well.

  3. Add the potatoes to the bowl and toss gently to coat them with the oil mixture.

  4. Arrange a single layer of potatoes overlapping slightly in a circle in the center of the cookie sheet, approximately a 9″ circle.

  5. Continue layering with the remaining potatoes, fanning them slightly and forming concentric circles. Keep the same center but diminish the size of each circle as you layer.

  6. Bake in the preheated oven until the potatoes are lightly browned and tender, about 45 minutes.

  7. Use a flat spatula to remove the potatoes from the cookie sheet and slide them onto a serving platter.

  8. Fan the potatoes slightly for an attractive presentation.
