Greg’s Very Best Caesar Salad

When our son Greg was 9 years old, I taught him how to make a KILLER Caesar dressing (as he calls it) for company guests. He stood in front of our guests in the dining room, prepared and served us all. A total winner; and we still make it today 18 years later.

Ingredients:

  • 6 tablespoons olive oil 🫒
  • 2 tablespoons red wine vinegar 🍷
  • 1 tablespoon lemon juice 🍋
  • 1 egg yolk 🥚
  • 1 tablespoon Worcestershire sauce
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup grated Parmesan cheese 🧀
  • 1 head romaine lettuce, torn into bite-size pieces 🥬
  • 1/2 cup croutons
  • 1/8 cup grated Parmesan cheese for garnish

Instructions:

  1. In a mixing bowl, combine olive oil, red wine vinegar, lemon juice, egg yolk, Worcestershire sauce, minced garlic, salt, pepper, and 1/4 cup of grated Parmesan cheese. Mix together well until all ingredients are fully incorporated.

  2. Set the dressing aside.

  3. In a large salad bowl, tear the romaine lettuce into bite-size pieces. Add the croutons and 1/8 cup of grated Parmesan cheese.

  4. Pour the prepared dressing over the lettuce mixture.

  5. Toss the salad gently to ensure all ingredients are evenly coated with the dressing.
