Ingredients:
- 1/2 cup Bulgur wheat, cooked
- 4 Potatoes (Aloo), boiled
- 1-inch Ginger, grated
- 2 cloves Garlic, grated
- 2 Green Chillies, chopped
- 1 teaspoon Red Chilli powder
- 1 tablespoon Cumin powder (Jeera)
- 2 Carrots (Gajjar), grated
- 1/2 cup Cauliflower (Gobi), grated
- 3/4 cup Instant Oats (Oatmeal)
- Salt, to taste
- 1/4 cup All Purpose Flour (Maida)
- Oil, for cooking

Instructions:
- Begin by pre-cooking the bulgur wheat: Soak 1/2 cup bulgur wheat in 1 cup of boiling hot water. Let it sit for 15-20 minutes, then strain any excess water.
- In a mixing bowl, mash the boiled potatoes until smooth.
- Add the soaked bulgur wheat, grated ginger, garlic, chopped green chilies, grated carrots, cauliflower, instant oats, red chili powder, cumin powder, and salt to the mashed potatoes. Mix thoroughly until all ingredients are well combined.
- Taste the mixture and adjust the seasoning, adding more salt or spices if needed.
- Shape the mixture into small, golf ball-sized portions, then press lightly in the middle to form patties.
- Dust each patty lightly with all-purpose flour on both sides and arrange them on a plate. At this stage, you can refrigerate the patties until you’re ready to cook.
- In a wide pan, heat oil over medium heat. Pan-fry the patties for 8-10 minutes on each side, or until golden and crispy.
- Serve the Bulgur Wheat Potato Patties hot with a spicy dipping sauce or as a perfect tea-time snack.
