Instructions:

  1. Prepare the Potatoes and Quinoa:

    • Begin by boiling the potatoes in a pot of water for about 15 minutes or until tender.

    • Toast the quinoa in a dry pan with a drizzle of olive oil for a couple of minutes, stirring frequently to prevent burning. Set aside to cool slightly.

    • Add the cooked quinoa, mashed potato, a pinch of salt, pepper, and sautéed spring onion (finely chopped or lightly sautéed in olive oil).

  3. Form and Cook the Quinoa Patties:

    • Shape the quinoa mixture into small patties, about the size of a regular burger patty.
    • Heat a non-stick pan over medium heat, and add a small amount of olive oil. Once hot, add the patties and cook for about 3 minutes per side, or until golden brown and crispy. Remove from heat.
