Whole Wheat Biscotti Without Butter

Instructions

  1. Preheat the Oven:
    Start by preheating your oven to 175°C (350°F), setting it to static (non-convection) mode. Line a baking tray with parchment paper to prevent sticking.

  2. Prepare Dry Ingredients:
    In a large mixing bowl, combine the whole wheat spelt flour and unrefined brown cane sugar. Grate the zest of one orange directly into the dry mixture, releasing its fragrant oils.

  3. Add Wet Ingredients:

    Once the dough has rested, lightly flour your work surface with a small amount of whole wheat spelt flour. Roll out the dough to about 1/4-inch thickness. Using your favorite cookie cutter (a 5.5 cm round mold is ideal), cut out individual biscotti shapes. Gather any leftover dough, reshape it, and continue cutting until you have around 30 biscotti.

  7. Bake:
    Arrange the shaped biscotti on the prepared baking tray, making sure to leave enough space between each piece for expansion. Place the tray in the preheated oven and bake for 20 minutes at 175°C (350°F). The biscotti should be golden brown and slightly firm to the touch when done.

  8. Cool:
    Once baked, remove the biscotti from the oven and carefully transfer them to a wire rack to cool. Allow them to cool completely before serving to enjoy their crisp texture and delicate, buttery flavor.
