Dutch Split Pea Soup 🍲

Description: This is a rich, but a little different split pea soup. I have been making this for 30 years. I have no idea where it came from. It takes a little time to make, but it is worth it.

Total Time: 3 hours 30 minutes

Servings: 8

Ingredients:

Quantity Ingredient
3 boneless pork ribs
2 water
1 onion
1/2 teaspoon salt
1 teaspoon pepper
1/4 cup diced tomatoes
1 cabbage
2 celery
1/2 teaspoon dried thyme

Instructions:

  1. Prepare the Pork:

    • Cut the ribs into serving pieces.
  2. Cook the Pork:

    • Place ribs and next five ingredients in a large saucepot.
    • Bring to a boil, reduce heat to simmer, and cover.
    • Simmer for two hours.
  3. Remove Excess Fat:

    • Cool in the refrigerator until any fat has hardened and can be removed easily.
    • Discard the fat.
    • You can do this the day before and leave in the refrigerator overnight.
  4. Final Steps:

    • Before serving, add the remaining ingredients to the pot.
    • Bring to a boil, then reduce heat to simmer and cover.
    • Simmer for one hour, or until all vegetables are tender.
