Beef Short Rib Soup (Sop Iga Sapi)

- 2 stalks green onions, diagonally sliced
- 2 stalks celery, sliced to your preference

- 1-2 tablespoons granulated sugar (to taste)
- Ground black pepper to taste
- 1 tablespoon bouillon powder (or to taste)
- Approximately 1 liter of water

Begin by washing the beef short ribs thoroughly. Place them in a pot with 1 liter of water and add the crushed ginger. Bring to a boil, then reduce the heat and simmer until the meat becomes tender. This may take around 1-1.5 hours, depending on the size of the meat pieces. -
Sauté the Aromatics:
While the beef is cooking, heat a little oil in a pan. Sauté the shallots and garlic until they become fragrant and golden brown. Once aromatic, transfer this mixture into the pot with the beef. Continue to cook until the beef is halfway tender. -

When the beef is tender, add the diced potato, carrot slices, salt, granulated sugar, bouillon powder, ground black pepper, and finely ground nutmeg. Stir well to combine all the ingredients. Cook until the vegetables are tender and the flavors meld together, about 20-30 minutes. -
