Recipe Details:

  • Servings: 8
  • Yield: 2 1/2 quarts soup
  • Prep Time: 10 minutes
  • Cook Time: 45 minutes
  • Total Time: 55 minutes

Ingredients:

  • 1/4 cup red lentils
  • 1/4 cup orzo pasta
  • 1/4 cup low-sodium beef bouillon powder
  • 2 1/2 cups pearl barley
  • 2 onions, diced
  • 2 tsp ground cumin
  • 1 tbsp chili powder
  • 1 tsp ground black pepper
  • 1/4 cup granulated sugar
  • 1/2 cup Splenda granular
  • 1/4 cup bulk sausage
  • 1 can (8 oz) green chilies
  • 1 can (14.5 oz) canned tomatoes with green chilies
  • 2 quarts water
  • 1 can (15 oz) chili beans

Instructions:

  1. Prepare the Dry Mix:

    • Combine all dry ingredients (red lentils, orzo pasta, beef bouillon powder, pearl barley, diced onions, ground cumin, chili powder, black pepper, granulated sugar, Splenda granular, bulk sausage, green chilies, and canned tomatoes with green chilies) in a large bowl.
    • Pour the mixture into a sealable jar or plastic bag.
  2. Package the Mix:

    • Enclose cooking instructions (see below) with the dry mix.
    • Place the mix in a decorative cellophane bag and tie with a bow.
  3. Cooking Instructions:

    • Bring 2 quarts of water to a boil in a large pot.
    • Add the dry package mix and canned tomatoes with green chilies to the boiling water.
    • Stir well and cook for 35-45 minutes, or until lentils and barley are tender.
  4. Prepare the Meat:

    • While the soup is cooking, brown the ground beef in a skillet over medium heat until no longer pink, breaking it up as it cooks.
    • Transfer the cooked beef to a colander and rinse under hot water. Drain well.
  5. Finish the Soup:

    • Add the drained beef to the soup mixture.
    • Stir in the canned chili beans and continue to cook until heated through.
    • Taste the soup and adjust seasoning as needed, adding salt if desired.
  6. To Serve:

    • Ladle the soup into large bowls.
    • Serve with crackers, cornbread, or toasted sourdough bread.
  7. Optional Garnishes:

    • Top each serving with grated cheddar cheese, a dollop of sour cream, or chopped pickled jalapenos, according to preference.

Variations:

  • 1. Bean Varieties:
    • Substitute or add canned black beans, great northern beans, navy beans, kidney beans, or corn for the chili beans. Adjust water quantity as needed.
  • 2. Meat Options:
    • Replace the lean ground beef with bulk sausage (beef or venison) for a different flavor profile.
  • 3. Adjusting Heat Levels:
    • If using plain canned tomatoes instead of tomatoes with green chilies, add a can of chopped green chilies or 1/8-1/4 tsp crushed red pepper flakes or cayenne pepper to enhance the flavor and heat level.

Notes:

  • Salt to Taste: This recipe doesn’t contain salt in the dry mix, allowing the recipient to adjust the seasoning according to their preference.
  • Gift Idea: This soup mix makes for a thoughtful hostess gift or a delightful addition to a gift basket for friends and family.

Enjoy the warmth and flavor of this hearty Chili-Rice Soup Gift Mix, perfect for sharing with loved ones during the winter season! 🎁🍲
