Rica Rica Ayam Kemangi: A Fragrant Indonesian Chicken Dish

Ingredients:

  • 1/2 chicken, cut into pieces
  • A small amount of oil for sautéing
  • 3 shallots, peeled and chopped
  • 3 cloves garlic, peeled and minced
  • 1 teaspoon black pepper
  • 2 tomatoes, chopped
  • 1 thumb-sized piece of turmeric, peeled and chopped
  • 1 thumb-sized piece of ginger, peeled and chopped
  • 1 cup water
  • 2 bunches of basil leaves
  • 3 kaffir lime leaves
  • 2 bay leaves
  • 1 stalk lemongrass, bruised

Instructions:

  1. Prepare the Spice Paste:

    • In a mortar and pestle or food processor, combine the shallots, garlic, black pepper, turmeric, and ginger. Grind or blend until you achieve a smooth paste.
  2. Sauté the Aromatics:

    • Heat a small amount of oil in a large pan over medium heat. Add the spice paste and sauté until fragrant.
  3. Add Herbs and Tomatoes:

    • Add the lemongrass, kaffir lime leaves, bay leaves, and chopped tomatoes to the pan. Continue to sauté until the tomatoes begin to soften and the mixture becomes aromatic.
  4. Cook the Chicken:

    • Pour in a small amount of water to create a bit of sauce. Add the chicken pieces to the pan, stirring to coat them well with the spice mixture. Cook until the chicken is fully cooked through, ensuring it’s tender and flavorful.
  5. Incorporate Basil:

    • Once the chicken is cooked, add the basil leaves. Stir gently and cook for an additional 2-3 minutes, allowing the basil to release its fragrant aroma.
  6. Serve:

    • Taste and adjust seasoning if necessary. Serve hot with steamed rice or your favorite side dishes.
