Tongseng Daging Sapi: A Savory Indonesian Beef Stew
Tongseng Daging Sapi, a classic Indonesian dish, is a rich and flavorful beef stew that combines tender beef chunks with aromatic spices and creamy coconut milk. Perfect for a hearty family meal or a special gathering, this recipe brings together a harmonious blend of ingredients and flavors. Here’s how to make it:
Ingredients:
- 1 kg beef, cut into cubes
- 5 bay leaves
- 2 stalks lemongrass, smashed
- 4 kaffir lime leaves
- 1 thumb-sized piece of galangal, smashed
- 2 packs (200 ml each) of coconut milk (Kara brand)
- 5 spring onions, diagonally sliced
- 4 tomatoes, cut into 4-6 pieces
- Sweet soy sauce, to taste
- Sugar, salt, pepper, and beef bouillon powder, to taste
- Fried shallots, for garnish
- 2 tablespoons vegetable oil, for sautéing
- 1 liter beef broth
- 1 liter water
- Cabbage, sliced thinly, to taste
- Chili (optional), to taste (I skipped it for a milder flavor suitable for children)
For the Spice Paste:
- 10 shallots
- 8 cloves garlic
- 2 cm turmeric root
- 4 candlenuts
- 1 teaspoon ground coriander
Instructions:
-
Prepare the Beef:
- Begin by boiling the beef twice. Discard the first batch of boiling water to remove impurities, then reserve the second batch of boiling water for later use.
-
Sauté the Spices:
- Heat the vegetable oil in a pan over medium heat. Add the spice paste ingredients—shallots, garlic, turmeric, candlenuts, and ground coriander—along with the bay leaves, kaffir lime leaves, galangal, and lemongrass. Sauté until fragrant and the spices are well-cooked.
-
Combine Ingredients:
- Add the boiled beef cubes to the pan. Pour in the reserved beef broth, water, and coconut milk. Stir well to combine. Season with sweet soy sauce, sugar, salt, pepper, and beef bouillon powder. Bring the mixture to a boil.
-
Cook the Stew:
- Once the stew is almost cooked, add the sliced spring onions, cabbage, and tomatoes. Adjust the seasoning to taste. Continue to cook until the vegetables are tender and the beef is fully cooked.
-
Serve:
- Garnish with fried shallots before serving. Enjoy your Tongseng Daging Sapi hot with steamed rice or as a delicious standalone dish.
This Tongseng Daging Sapi recipe is a wonderful introduction to Indonesian cuisine, featuring bold flavors and comforting ingredients. Whether you’re serving it for a weeknight dinner or a special occasion, this hearty stew is sure to please.
