Soto Ayam Surabaya
Ingredients:
- 1/2 chicken, cut into pieces
- 6 shallots
- 4 cloves garlic
- Coriander powder, to taste
- Pepper, to taste
- 1 turmeric root
- 1 galangal root
- 1 ginger root
- 1 candlenut
- Bay leaves
- Kaffir lime leaves
- Sugar
- Salt
- Seasoning (optional)
- Spring onions
- Cabbage
- Bean sprouts
- Potatoes
- Hard-boiled eggs
- Sambal (chili paste)
Steps:
- Grind all spices except galangal and lemongrass into a paste.
- Sauté the ground spices until fragrant.
- Boil the chicken until tender, then add the sautéed spices.
- Taste and adjust seasoning with sugar, salt, and seasoning if desired.
- Serve hot with fried potatoes, rice vermicelli, bean sprouts, and sliced tomatoes.

- Ground coriander, to taste
- Ground black pepper, to taste
- 1 piece turmeric root
- 1 piece galangal root
- 1 piece ginger root
- 1 candlenut
- Fresh bay leaves
- Fresh kaffir lime leaves
- Sugar, to taste
- Salt, to taste
- Optional: seasoning to enhance flavor
- Spring onions, chopped
- Cabbage, thinly sliced
- Bean sprouts
- Potatoes, diced and fried until crispy
- Hard-boiled eggs, halved
- Sambal (chili paste), to serve
Instructions:
- In a mortar and pestle or a food processor, grind shallots, garlic, coriander, black pepper, turmeric, ginger, and candlenut into a smooth paste.
- Heat a tablespoon of oil in a large pot over medium heat. Add the spice paste and sauté until fragrant.
- Add the chicken pieces to the pot and cook until they start to change color.
- Pour enough water into the pot to cover the chicken. Add bay leaves and kaffir lime leaves.
- Bring to a boil, then reduce the heat and simmer until the chicken is tender, about 30-40 minutes.
- Season the soup with sugar, salt, and any additional seasoning to taste.
- To serve, place a portion of rice vermicelli, fried potatoes, bean sprouts, and sliced cabbage in each serving bowl.
- Ladle the hot chicken soup over the noodles and vegetables.
- Garnish with hard-boiled egg halves, chopped spring onions, and a spoonful of sambal on the side.
