Karnataka Style Sorakkai Palya (Bottle Gourd Stir-Fry)

Ingredients:
- 1 bottle gourd, peeled and chopped
- 1 tomato, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 2 tablespoons sambar powder
- 1 sprig curry leaves
- Salt, to taste
- Oil, as needed
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Instructions:
- Heat oil in a pressure cooker.
- Add cumin seeds and curry leaves, and sauté for 10 seconds until fragrant.
- Add chopped tomatoes and salt, and cook until the tomatoes become soft and mushy.
- Once the tomatoes are soft, add turmeric powder, red chili powder, and sambar powder. Stir well.
- Add the chopped bottle gourd and mix everything thoroughly.
- After 2 minutes, add 1/2 cup of water. Close the pressure cooker and cook for 3 whistles.
- Let the pressure release naturally, then open the cooker.
- Serve your Karnataka Style Sorakkai Palya hot with rice and kirai sambar for a complete meal.
