This delightful Maharashtrian dessert is made from leftover rotis, turning simple leftovers into something absolutely delicious! Maharashtrian Policha Ladoo is a fantastic way to repurpose old rotis into a treat that everyone will enjoy. A must-try when you’re looking to make the most out of your kitchen leftovers!

Ingredients:

  • 4 leftover rotis
  • 2 tablespoons whole wheat flour
  • 1/2 cup jaggery
  • 1/4 cup ghee
  • 1/4 cup milk
  • 2 cardamom (elaichi) pods/seeds
  • 1/4 cup pistachios
  • 1/4 cup desiccated coconut

Preparation Time: 10 minutes

Cooking Time: 25 minutes

Instructions:

  1. Tear your leftover rotis into small pieces. Heat 2 tablespoons of ghee in a heavy-bottomed pan. Add the torn rotis and toast them until they crisp up.

  2. Once the rotis have become crisp, let them cool slightly before placing them in a mixer along with pistachios and cardamom powder. Blitz until finely powdered.

  3. In the same pan, melt jaggery with a little water, stirring until it thickens and becomes smooth.

  4. Add the powdered roti mixture, whole wheat flour, remaining ghee, and desiccated coconut to the jaggery syrup. Mix thoroughly, ensuring the mixture doesn’t burn by keeping the flame low.

  5. Once the mixture starts to come together, pour in the milk and mix well. You will end up with a slightly wet mixture.

  6. Allow the mixture to cool down for a few minutes. Keep a bowl of water handy to dip your hands in. Shape the mixture into medium-sized balls.

  7. Once shaped, serve your Maharashtrian Policha Ladoo as a sweet treat after meals.
